New models of kitchen appliances appear almost as fast as car models. Manufacturers try to make the cooking process as comfortable, safe and fast as possible. Now on the market are gas, electric stoves. Separately, there are induction hobs, the advantages and disadvantages of which will be discussed in this article.

What does an induction hob mean? Such panels are equipped with functions that solve the problems of old stoves and at the same time bring something new to the world of kitchen appliances. Many have not yet purchased this unit, despite the fact that IVP appeared on the market about three decades ago. Before you buy this type of hob, you should evaluate all the pros and cons in advance.

Induction hob

Operating principle

The first thing I want to say is that an induction hob is one of the varieties. There is also an electric hob. Their difference lies in a different principle of operation. The induction panel has a heating element in the form of an inductive coil, which forms an electromagnetic field (as a result, atoms of the metal crystal lattice of atoms are activated). Due to this, thermal energy is completely transferred to the bottom of the dishes, without heating the surface of the stove.

It is also worth mentioning that among the inductive type models there are many differences. The latest cookers have touch controls as well as ceramic glass burners. As an example - a built-in induction cooker combined BOSCH PIC645F1E. It is combined because of the 4 burners, only 2 are inductive, that is, the hob is induction and electric at the same time.

How induction hobs work (advantages and disadvantages of the cooking process)

Before buying, you need to find out if this device is suitable for you. To do this, we will understand the principle of operation. Thermal processing of food is possible only with properly selected dishes. There are such requirements:

  • dishes should be from ferrimagnetic raw materials;
  • it must be installed correctly on the burner, i.e. exactly.

If any of these conditions are not met, then the induction current simply will not pass through the bottom. But it is he who contributes to the formation and transfer of thermal energy. The advantages of the cooking process with the IWP include:

  1. High work efficiency - 90%.
    For comparison, gas - 30-60%, electric - 50-70%.
  2. Energy efficiency due to quick heating.
  3. The stove remains cold, because all the heat is transferred immediately to the dishes. But it is worth noting that if the food was prepared for a rather long time and at maximum power, it would be better to wait until the indicator informs about the cooling of the device.

The advantages of induction hobs are obvious, consider some of the disadvantages of this technique:

  1. Cooking in specialized dishes.
  2. High price (buying even the simplest model in Moscow will cost a lot).
  3. For cleaning you need special products that do not contain abrasive particles.

Induction hobs: benefits at the time of use

The biggest plus of the built-in induction panel is the safety of use, as mentioned earlier. In addition, there are several more useful options that improve the cooking process:

  • the presence of indicators of residual heat;
  • forced shutdown of heating;
  • blocking of device switching on modes;
  • the ability to instantly heat the stove (Power Booster).

Let us dwell on the last point. What does a Power Booster induction hob mean? This feature is in almost every device of this type. The stove has the main burners and dependent ones. If you use this option, the former take part of the power of the latter. This allows, for example, to boil water very quickly or to warm dinner.

Not ready for such innovations? You can buy a combined version. It combines gas (electric) hobs with inductive ones. There are even stoves with one burner (for example, for making noodles-woks).

Are there any disadvantages of induction hobs?

As we found out, the main disadvantage is the high price. She is very overpriced due to various options. Therefore, before choosing the induction hob completely, think about whether you need these functions.

Many people are worried about the moment of buying additional dishes, because it is not cheap at all. And the most important characteristic in it is magnetic permeability and resistivity. These values affect the penetration of induction into the layer of dishes.

However, we hasten to please: it is not necessary to buy such dishes. It is enough to do a thorough review of everything available in the house. This is done by holding a magnet to it. The most advanced panels can themselves determine the suitability of the material: steel, magnetizable stainless steel, cast iron, enameled iron.

A good way out of this situation is also to buy a steel disk, on which ordinary dishes are placed. Such a device evens out temperature fluctuations.

If the bottom of the cookware does not cover a large area of the burner, then you will not be able to warm up anything.

Is an induction panel harmful to health?

There are several points of view on this subject. Opponents of induction give the following arguments.

Firstly, it is not harmful if the burner is completely covered by the dishes and the safe distance is 30 cm from the stove. In most cases, this is not feasible, since you cannot watch the children around the clock. And the hostess needs to approach the stove from time to time during cooking.

Secondly, the outgoing flows of induction enter the human body, which can cause insomnia, headache, and fatigue. That is, it has a negative effect on the nervous system.

Thirdly, meat cooked on induction hobs loses all thiamine, and vegetables lose 75% of their vitamins.

ATTENTION! This is a lie, all these facts are rumors and far-fetched information. Mistresses never come right up to the stove, and the loss of nutrients has not been verified by any scientific institution.

In order not to get a negative effect from the plate, it is enough to study the attached instructions for use.

Conclusion

Before choosing an induction hob, pay attention to the number of options offered in order to choose the most optimal option. Also, do not forget about such basic characteristics as power, power consumption, design. There are many advantages, but the disadvantages are palpable - special dishes, high price. The decision to buy is in any case yours.
