Step-by-step recipe for making cottage cheese and cherry pie
Let's see what, why and how to do it.
Frozen butter three grated or cut with a knife. We add flour, gradually pouring it through a sieve, it will help to enrich our future dough with oxygen.
Add eggs to the resulting mass.
Add sugar, salt and, if desired, lemon zest.
Knead dough well so that it does not stick to your hands. Wrap the dough in plastic wrap and remove for several hours in the refrigerator.
While the dough is cooling down, we will be busy preparing the filling for the curd cake with cherry. To do this, pour milk into a metal container and wait for it to boil.
Pour semolina into boiled milk. Bring to a boil again and turn off the gas.
Now the eggs need to separate the yolks and proteins.
4 whites of protein with a mixer, adding a pinch of salt and 3-5 drops of lemon juice. Juice is not an obligatory ingredient, but it will give a little sourness, which will add spice to the taste. If you are not a fan of lemon flavor, you can completely do without juice. Beat until a thick, homogeneous and strong foam.
3 yolks add to our cottage cheese, pour baking powder to the same place and mix thoroughly.
Pour all the sugar into the cooled semolina porridge and mix well.
Mix porridge with cottage cheese, and then gently introduce the whipped proteins. It is necessary to mix carefully, lifting the filling from the bottom, making it homogeneous.
Now it is necessary to turn on and heat the oven to 2000 C. Prepare the mold by smearing it with butter. We have a form with a diameter of 28 cm.
We roll out the dough, making sure we fit the sides.
We put the finished form in the oven and bake until smooth golden color.
Test readiness can be checked with a toothpick.
While our foundation is being baked, let's prepare the filling for the pie with curd and cherry. For this 300 gr.cherries need to be washed, remove excess moisture with napkins or paper towels. With dried berries, remove the bones and squeeze out excess juice. The less juice there is, the tastier is the filling.
On the cooled dough, spread the cherries on an even layer.
Next, pour our curd-manna mixture to the top of the form.
Now it's time to recall the previously deferred yolk, add a little milk to it( you can replace it with boiled water) and beat well.
Blend spread our cake.
We decorate our cake with nuts. To do this, they need a little fry in a skillet, chop or grate and sprinkle the cake.
Bake at 2000 ° C for 50-60 minutes. Decorate the cake at its discretion. Here is our delicious cherry pie, bon appetit!
