Parsley tolerates hot days well, but the greens devoid of moisture become noticeably rougher and tougher, but accumulate aromatic substances and essential oils better:
- If parsley is intended for fresh use, the plant needs watering that provides 60–70% of soil moisture.
- To get a more fragrant raw material for drying, for a couple of weeks before harvesting, parsley is restricted in watering.
